Homemade Spinach Tortillas
Green dream tortillas! These homemade tortillas are so simple to make but add an extra level of antioxidants, flavour and colour. You only need a handful of ingredients to make these; spinach, garlic, lemon juice, spring onions, salt, masa harina flour and water.
Masa harina is a gluten free flour made from ground, nixtamalised corn. In Mexico masa marina is essential for tortilla making. Here in the UK, there are a number of online shops offering masa harina flour including Sous Chef and Cool Chile.
To make the tortillas, gently saute a handful of spinach with a clove of garlic, squeeze of lemon juice and diced spring onion. After a few minutes, once the spinach has started to wilt down, take off the heat and blend the mixture in a high speed blender until smooth with 3/4 cup of warm water.
In a bowl mix 1 cup of masa marina flour with the blended spinach. Add a generous pinch of salt and more water if required. The dough should be like play dough consistency, not too sticky (and not crumbling). Then the fun part, hand press each tortilla in between two sheets of plastic, using a cast iron press.

Ingredients (Serves 2)
- 1 handful fresh spinach
- 1 garlic clove
- 1 spring onion
- 1 cup masa harina flour
- 3/4 cup warm water
- 1/2 tsp salt
- 1 tsp rapeseed oil
- Squeeze of fresh lemon juice
Instructions.
Heat a pan over medium heat with a tsp of rapeseed oil.
Peel and chop the garlic, spring onion and spinach
Add to the pan and saute for 1-2 minutes until wilted.
Add the cooked ingredient to a blender with 3/4 cup of warm water
Blend until smooth and transfer contents to a mixing bowl
Add 1 cup of masa marina flour
Mix well until a play dough like consistency is achieved (if dough is too dry then add a little more water, if it is too sticky the add a little flour)
Leave the dough to rest under a damp tea towel for 20 minutes
Heat a cast iron griddle to a high heat.
Roll the dough into small golf sized balls and press these using a tortilla press
Cook the tortillas for 10 seconds on 1 side and then flip to cook for another 40 seconds- 1 minute. Flip again and the tortilla should bubble and rise. Take the tortilla off the griddle and wrap these in a clean dry tea towel until all have been cooked.
Serve immediately with your favourite toppings!
