Spiced Carrot & Banana Pancakes

Spiced Carrot & Banana Pancakes (1).jpgAs the mornings grow colder, the comfort breakfasts make an appearance and who doesn’t love pancakes? These carrot and banana pancakes are delicious, and super easy to make. For the topping I added carrot, raisins, linseeds and cinnamon cashew cream but they also taste great with berries so play around with your favourite toppings.

Spiced Carrot Pancakes (makes 8 small pancakes)


  • 1/2 cup whole wheat flour
  • 1/2 cup plain flour
  • 3/4 teaspoon baking powder
  • 1 1/2 tablespoons flax seed
  • 1/2 carrot grated
  • 1/2 banana
  • 1 teaspoon cinnamon
  • 1 teaspoon maple syrup
  • 1/2 teaspoon nutmeg
  • Pinch of salt
  • 1/2 teaspoon vanilla essence
  • 360 ml plant milk
  • 1/2 banana
  • 1/2 carrot


  1. In a small bowl mash the banana with a fork until smooth.
  2. Combine all the ingredients in a large bowl and whisk the batter until thoroughly mixed.
  3. Heat a non-stick pan on medium heat until hot.
  4. Add a teaspoon of butter and pour enough batter to cover the pan.
  5. Cook for about 2 minutes on either side and the pancake is golden brown.
  6. Decorate your pancakes with fruits, and creams of your choice
